INGREDIENTS:
1/2 kilo beef brisket
Marinade:
1/4 cup soy sauce
1 tsp black pepper
1/4 cup sugar
Sauce:
2 tbsp ginger
1 cloves garlic crushed
1 medium size onion chopped
4 cups beef broth
2 pieces star anise
sesame seeds or oil (optional)
1 – tsp flour (optional )
sliced fried garlic as toppings (optional)
sliced scallions
INSTRUCTIONS:
1. Slow cook beef brisket until it is tender, which usually takes about an hour and a half, but may vary depending on the thickness of the meat. Once done, keep the broth aside.
2. Marinate beef brisket for 30 minutes in the marinade ingredients.
3. Next, sauté ginger, garlic, and onion. Meanwhile, remove the meat from the marinade and drain it. Sauté the meat for 5 to 10 minutes, then add the beef broth and let it simmer.
4. Add the remaining marinade and let it simmer for an additional 5 minutes. Add the star anise. When the meat is very tender, dissolve flour in 1/4 cup of water and gradually mix it in with the beef while stirring to avoid lumps. This step is optional and should only be done if you prefer a thicker sauce.
5. Let simmer until the flour taste is gone.
6. Season to taste and add more sugar if desired for additional sweetness.
7. Top with fried garlic slices and scallions for garnish.
8. Serve with Sinangag or Garlic rice.
